Indian mutton (goat meat)

 Namkeen Ghost is a delicious and flavorful Indian mutton (goat meat) dish that is typically enjoyed as a savory snack or appetizer. It's a great dish to serve during gatherings and special occasions. Here's a recipe for making Namkeen Ghost:

Ingredients:


  • 500 grams mutton (goat meat), cut into bite-sized pieces
  • 2 large onions, finely sliced
  • 2-3 green chilies, finely chopped (adjust according to your spice preference)
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup plain yogurt (curd)
  • 2 teaspoons red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon black peppercorns, crushed
  • 1/4 cup mustard oil (or any cooking oil of your choice)
  • Salt to taste
  • Fresh coriander leaves, chopped for garnish
  • Lemon wedges for serving


Instructions:

  1. Marination: In a mixing bowl, combine the mutton pieces with yogurt, ginger-garlic paste, half of the red chili powder, half of the turmeric powder, and a pinch of salt. Mix everything well to ensure the meat is coated evenly. Cover the bowl and let it marinate for at least 1-2 hours in the refrigerator.

  2. Heat oil in a heavy-bottomed pan or pressure cooker over medium heat. Add cumin seeds and let them splutter.

  3. Add the finely sliced onions and sauté until they turn golden brown. Stir occasionally to avoid burning.

  4. Now, add the marinated mutton to the pan along with the marinade. Cook the mutton on medium-high heat, stirring regularly, until it is browned and the moisture has evaporated. This might take around 10-15 minutes.

  5. Reduce the heat to medium-low and add the remaining red chili powder, turmeric powder, crushed black peppercorns, and salt to taste. Mix well and continue cooking for another 5 minutes to allow the spices to infuse into the meat.

  6. If using a pressure cooker, add a little water (about 1/4 cup) at this point, close the lid, and cook the mutton until it's tender. It usually takes 3-4 whistles, but cooking time may vary depending on the meat's tenderness.

  7. If using a regular pan, you might need to add a little more water to ensure the mutton cooks thoroughly. Cover the pan and cook on low heat until the meat is tender and cooked through. Stir occasionally and check for the desired tenderness.

  8. Once the mutton is tender and cooked to your liking, increase the heat to medium-high, and stir-fry the mutton until the masala coats the meat evenly and becomes slightly dry. This will enhance the flavor and give it a "namkeen" (salty and savory) taste.

  9. Garnish Namkeen Ghost with chopped coriander leaves and serve hot with lemon wedges on the side.
