Instructions:

  1. Prepare the dough:
    In a small bowl, mix the warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until it becomes frothy.

  2. In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture and olive oil. Mix until it forms a soft dough.

  3. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise for about 1-2 hours or until it doubles in size.

  4. Preheat your oven to 450°F (230°C) and place a pizza stone or an inverted baking sheet inside to heat.

  5. Prepare the filling:
    In a bowl, mix the shredded mozzarella, ricotta cheese, cooked Italian sausage (if using), sliced pepperoni (or other toppings), grated Parmesan cheese, dried oregano, dried basil, salt, and pepper. Stir everything together until well combined.

  6. Assemble the calzones:
    Divide the dough into 4 equal parts. On a floured surface, roll out each portion into a circle (approximately 8-10 inches in diameter).

  7. Spoon a quarter of the filling onto one half of each circle, leaving a small border around the edges. Fold the other half of the dough over the filling to create a half-moon shape. Press the edges firmly to seal.

  8. Brush the top of each calzone with the egg wash mixture.
