2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
1 small onion, finely diced
3 cloves garlic, minced
1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 cup cherry tomatoes, halved2 cups dried penne pas2 cups chicken brot1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- Salt and black pepper, to taste
- Fresh basil leaves, for garnish
Instructions:
Heat the olive oil in a large skillet over medium-high heat. Add the diced chicken and cook until it's browned and cooked through. Remove the chicken from the skillet and set it aside.
In the same skillet, add the diced onion and sauté for 2-3 minutes until it becomes translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
Add the sliced red and green bell peppers to the skillet and cook for about 3-4 minutes until they start to soften.
Stir in the halved cherry tomatoes and cook for an additional 2 minutes until they release their juices.
Add the dried penne pasta to the skillet, followed by the chicken broth. Bring the mixture to a simmer, then reduce the heat to medium-low and cover the skillet with a lid. Let it cook for about 10-12 minutes or until the pasta is al dente, stirring occasionally to prevent sticking.
Once the pasta is cooked, stir in the cooked chicken, heavy cream, grated Parmesan cheese, dried oregano, dried basil, and red pepper flakes (if using). Season with salt and black pepper to taste. Continue to cook for another 2-3 minutes until the sauce thickens and everything is well combined.
Remove the skillet from the heat and let it sit for a couple of minutes to allow the flavors to meld together.
Garnish with fresh basil leaves before serving.
